Chitterlings *10lbs pork chitlins (chitterlings) *1/2 tbsp dried sage *1 tsp crushed red pepper * 2 tbsp salt * 1 tsp dried thyme Wash the chitlins and remove the excess fat. Place the chitlins in the a large pot filled with warm water to a level 3 inches over the chitlins. Add the seasonings. Cook over low heat for 3 hrs or until tender. Skim off the fat that comes to the top of the pot as the chitlins cook. Remove the chitlins from the water, chop in small pieces, and serve hot. Serves 6. Hog (Maw) with Sauerkraut The next best thing to chitlins. *5lbs hog malls (stomachs) *1 tsp dried thyme *1 tsp dried sage *1 tsp crushed red pepper *1 qt sauerkraut or 2 cans (16 ounces each) Wash the hog malls and cut away the excess fat. Place the malls in a large pot along with the seasonings and cover with water. Cook slowly for 3 to 3 1/2 hrs. Remove the malls from the pot and place them in a baking dish along with 1 cup of the cooking liquid from which the fat has been skimmed. Add the sauerkraut, cover the pan tightly with foil, and bake in a 325 oven for 45 mins. Add water if needed to keep the malls from drying out. Servings: to each his own. We talking about the undesirable parts of the pig that most of you have never heard of. Chitlins, hog malls, pigs feet. The less fortunate people aren't eating the best cuts of the meat. The slaves had to eat these undesirable cuts of meat and make them edible and taste delicious. Growing up in the black community, the meat I'm familiar with (chitlins) anyway. I have never seen a hog malls in real life. My mother use to eat chitlins maybe once a yr and the process on making them tho!!!! BABY the smell that comes of chitlins will be in your mind FOREVER. I don't believe there is a way to clean chitlins without the smell. The taste isn't my favorite thinking back to the 1900's. my mother made me eat them one time and it was like waging a war. I sat for hrs trying to figure out how to get rid of them. Up until that point she always had some good eats. It made it hard to trust her after that when it came to food. But long story short, I through that shit out the window. I never touched chitlins ever again. Pig feet aren't something that wasn't in my house growing up, I seen them other places. Like a bar, in a jar like pickles. I can't say I have ever seen someone eat pigs feet. Hog malls (mows) is the sack of the belly............ Just gonna leave that there.
